Bulletproof Coffee Keto Mug Cake

Ingredients
2 egg
2 tbsp butter, melted
2 tsp MCT oil
2 tbsp heavy cream
2 tbsp granulated Stevia or other low carb granulated sweetener
2 tsp instant coffee granules
2 tbsp coconut flour
3 tbsp almond flour
whipped heavy cream, for serving (optional)
Instructions
- In a microwave-safe mug place the heavy cream, egg, butter, sweetener and MTC oil and whisk to combine. 
- Whisk in coffee granules until dissolved. 
- Add the coconut flour and almond flour and whisk until smooth. 
- Microwave on high for 75-90 seconds or until just firm to touch and toothpick inserted into the center comes out clean. 
- Top with whipped cream (if using) and serve.
