Creamy Sweet Potato Happiness

Wow! This recipe is a game changer if you are someone who does not eat sweet potatoes. It tastes like dessert! By adding Shaklee’s vanilla protein powder the protein content of the dish is increased while adding amazing flavor at the same time!

An all time seasonal favorite, sweet potatoes are a root vegetable with colored flesh inside! Mostly orange in color they are loaded with beta carotene, a antioxidant that converts to Vita A in the body. A rich source of fiber, vitamins, and minerals they promote a healthy digestive system.

This recipe includes good fats like coconut milk and ghee for a creamy smooth flavor! You can add more flavor to them with herbs like rosemary, which is my all time favorite with coconut or olive oil drenched over it or turmeric. Eat as a side dish, paired with green vegetables and a main course of 100% grass fed beef, chicken or sustainable or wild caught fish. Bon Appetit! Creamy Mashed Sweet Potatoes

Start to Finish: 20 minutes

Ingredients:

  • 1 large sweet potato, peeled and cut into 1/2-inch cubes (2 cups’ worth)

  • 2 scoops life shake protein

  • 1/4 cup full-fat canned coconut milk (BPA-free)

  • 1 tablespoon grass-fed ghee

  • 1 teaspoon sea salt

  • 1 teaspoon cracked black pepper

Instructions:

  1. In a large pot with a steamer basket and 1 inch of boiling water, steam sweet potatoes for 7 minutes or until cubes are tender and easy to pierce with a knife.

  2. Transfer potato cubes to a medium mixing bowl and mash with a potato masher.

  3. Add remaining ingredients to the bowl and mix well.

  4. Serve warm. Serves 2
