Enlightenment Bars

These Enlightenment Bars are a new creation of mine. They started out to be an energy bite and after tweaking a few energy bar recipes they turned into my own Sensual Success!

They are as delicious as they look and so easy to make!

Many of you are looking for quick snack foods that pack a powerful punch of good nutrition, are Bullet Proof, Keto/Paleo, and Gluten Free so here they are! My daughter and I had a great time in the kitchen creating them together, even though she was thousands of miles across the world. Thank God for technology so we can still be cooking together!

Ingredients:

1/4 cup organic coconut oil

1/2 cup coconut nectar, honey, or Lundbergs Organic Brown Rice Syrup

1/2 cup raw tahini or almond butter

1 Tsp pure vanilla extract

1 cup sunflower, pumpkin, and sesame seeds

1/2 cup goji berries, craisins, golden raisins, or other dried berries

1/2 cup shredded coconut

1/4 cacoa nibs and cocao chips

1/4 cup hemp seeds

1/4 cup Shaklee 100% grass-fed vanilla whey protein

dash of Himalayan salt

Directions:

Mix top 4 ingredients well, or mix in blender.

In a large mixing bowl, mix seeds, protein powder, berries, coconut, cacao and hemp seeds.

Add some of the dry ingredients a little at a time into the wet mixture and stir together. You want the mix to be somewhat gooey. If it becomes to dry the bars will break apart. Sometimes I have extra dry mix so I set it aside and add it to my next cooking experiment, to granola, oatmeal or breads. Yummy!

Press easily into a pan to for desired thickness. Place in freezer until firm. Cut into squares and store in frig or freezer up to 30 days. Amare!
